Ridiculous Nachos

1 tbsp butter

1 bag of tortilla chips

4 fresh jalapeno peppers, sliced

1 can refried beans

1 bag of pre-shredded cheese (“Mexican” variety)

½ cup Chunky Salsa

½ cup sour cream

2 cups shredded chicken (baked deli or rotisserie chicken works well)


In a small saucepot, begin simmering the butter and refried beans. On a large serving platter, arrange a layer of chips. Sprinkle about 1/3 the bag of cheese on this layer, Add 1 cup chicken, 1/3 jalapeno slices. Add another layer of chips, and distribute remainder of cheese jalapeno slices and chicken. Distribute refried beans on top of the tortilla pile and top with salsa and sour cream.

  1. Hmm, butter. Never put butter on nachos before. Perhaps I shall have to try.

  2. The butter is there to just “help along” the beans as they warm. I also try to convince myself that they prevent the refried beans from burning easier than if it wasn’t included, but that’s probably bunk.
